  • 1/2 cup (115g) unsalted butter, cold and cubed
  • 1/4 cup (50g) sugar
  • 1 egg yolk
  • 1-2 tbsp cold water

For the Lemon Curd:

  • Zest of 2 lemons
  • 3/4 cup (150g) sugar
  • 4 eggs
  • 1/2 cup (115g) unsalted butter, cubed

Instructions

  1. Make the Crust:
In a food processor, pulse flour, sugar, and butter until crumbly. Add egg yolk and water, pulsing until the dough forms. Chill for 30 minutes. Roll out and bake at 350°F (175°C) for 15-20 minutes.
  2. Prepare the Lemon Curd:
In a saucepan, whisk lemon juice, zest, sugar, and eggs. Cook over medium heat, stirring, until thickened. Stir in butter until smooth.
  3. Assemble the Tart:
Pour lemon curd into the baked crust. Refrigerate for at least 2 hours before serving.
  4. Serve:
Dust with powdered sugar and garnish with lemon slices.

Tips for Success

  • Chill the Dough: A well-chilled crust ensures flaky texture.
  • Strain the Curd: For an extra smooth filling, strain the curd before pouring it into the crust.
  • Balance the Sweetness: Adjust sugar to taste based on the lemons’ tartness.
