- ½ cup red onion, finely chopped
- ½ cup fresh cilantro, chopped

Instructions
- Sear the Beef:
- Season the beef with salt on both sides.
- In a hot skillet, sear until golden brown on all sides. Set aside.
- Prepare the Birria Broth:
- In a large pot, sauté onion, tomatoes, garlic, and chili peppers.
- Add black pepper, cloves, thyme, cumin, oregano, bay leaves, and cinnamon.
