Lion’s Mane Steak Pita with Chimichurri

A Flavorful Plant-Based Delight

Introduction

This Lion’s Mane Steak Pita with Chimichurri is a delicious plant-based twist on a classic steak sandwich. The meaty texture of Lion’s Mane mushrooms makes it an excellent substitute for steak, while the fresh chimichurri sauce adds a bright, herby punch. Perfect for a quick and satisfying meal, this dish is easy to prepare and packed with bold flavors.

Ingredients

  • For the Mushroom Steak:
    • 1 Lion’s Mane mushroom flush
    • 2 tbsp Old Bay seasoning
    • 1 tbsp cooking oil
    • Salt and pepper to taste
  • For the Chimichurri Sauce:
    • 1 bunch parsley, chopped
    • 1 bunch coriander, chopped
    • 2 red chilies, finely chopped
    • 1 garlic clove, minced
    • 2 tbsp extra virgin olive oil (EVOO)
    • 1 tbsp red wine vinegar
    • Salt and pepper to taste
  • For Assembly:
    • 1 pita bread
    • Extra chimichurri for topping

Instructions

  1. Make the Chimichurri:
    • In a bowl, mix parsley, coriander, chilies, garlic, EVOO, and red wine vinegar.
    • Season with salt and pepper to taste and set aside.
  2. Sear the Lion’s Mane Mushroom:
    • Heat oil in a skillet over medium heat.
    • Add the Lion’s Mane mushroom flush and season with Old Bay seasoning.
    • Sear for 3-4 minutes per side until golden brown.
  3. Press & Season Again:
    • Use a weighted pan to press down the mushroom, releasing excess moisture.
    • Add more Old Bay seasoning and sear for another 1-2 minutes per side.
  4. Slice & Sear Again:
    • Slice the mushroom into thin strips and sear them for an extra crispy texture.
  5. Assemble the Pita:
    • Warm the pita bread.
    • Spread a layer of chimichurri sauce, add the mushroom steak slices, and drizzle with more chimichurri.
  6. Serve & Enjoy:
    • Serve warm with extra chimichurri on the side.

Tips for Success

  • Pressing the Mushroom: Helps achieve a firmer, meaty texture.
  • Let Chimichurri Rest: Letting the sauce sit for 10 minutes enhances the flavors.
  • Customize the Heat: Adjust the number of chilies based on your spice preference.
