Ingredients:
- 1 kg beef chuck or brisket
- 1 carrot, chopped
- 1 celery stalk, chopped
- 1 onion, chopped
- Cinnamon stick
- Star anise
- Mixed herbs (thyme, rosemary, bay leaves)
- 1 garlic clove, minced
- 1 glass red wine
- ½ glass Marsala wine
- 1 tbsp tomato paste
- ½ glass balsamic vinegar
- 2 tbsp brown sugar
- Olive oil
- Salt and whole black peppercorns

Instructions: Begin by cutting the vegetables and placing them in a saucepan with spices and herbs. Add a generous drizzle of olive oil. Trim excess fat from the beef, season with salt and pepper, and sear it on all sides until golden.
