Ingredients
Crispy Shallots:
- 3 shallots, thinly sliced
- 1 cup neutral oil
- Pinch of salt
Soup:
- 5 slices bacon, diced

- 1 cup carrots, shredded

Instructions
1. Roast the Garlic:
- Slice the tops off garlic heads, drizzle with olive oil and salt.
- Wrap in foil and roast at 400°F until soft.
2. Make Crispy Shallots:
- Heat oil over medium-low heat and fry shallots until golden brown.
- Remove and drain on paper towels.
3. Prepare the Soup:
