Introduction

Ingredients

Crispy Shallots:

  • 3 shallots, thinly sliced
  • 1 cup neutral oil
  • Pinch of salt

Soup:

  • 5 slices bacon, diced
  • 4 tbsp butter
  • 1 yellow onion, diced
  • Pinch red pepper flakes
  • 2 heads roasted garlic
  • 1 cup carrots, shredded
  • 3 cups broccoli (stems and florets, roughly chopped)
  • 1/4 cup all-purpose flour
  • 1 tbsp paprika
  • 1 tsp white pepper
  • 2 tsp turmeric
  • Salt to taste
  • 4 cups chicken stock
  • 2 cups whole milk
  • 1 1/2 cups sharp cheddar, grated
  • 1 cup smoked gouda, grated

Garnish:

  • Crispy shallots
  • Chopped chives
  • Crispy bacon

Instructions

1. Roast the Garlic:

  • Slice the tops off garlic heads, drizzle with olive oil and salt.
  • Wrap in foil and roast at 400°F until soft.

2. Make Crispy Shallots:

  • Heat oil over medium-low heat and fry shallots until golden brown.
  • Remove and drain on paper towels.

3. Prepare the Soup:

  • In a Dutch oven, cook bacon on low-medium heat until crispy. Remove and discard most of the fat.
  • Add butter, onions, red pepper flakes, and a pinch of salt. Cook for 5 minutes.
  • Stir in broccoli, roasted garlic, turmeric, paprika, and white pepper. Cook for 3 minutes.
  • Add flour, stir to coat, then slowly pour in chicken stock and milk, stirring continuously.
  • Simmer for 5 minutes until thickened.
  • Stir in carrots and cheeses, one handful at a time, until melted.
  • Adjust seasoning to taste.

4. Serve:

  • Ladle soup into bowls and top with crispy shallots, bacon, and fresh chives.
