For the Cowboy Butter:

  • 90g butter
  • 4 garlic cloves, minced
  • 1 tbsp Dijon mustard
  • ½ tsp cayenne pepper
  • 2 tbsp fresh parsley, chopped
  • 1 tsp chili flakes
  • Pinch of thyme
  • 1 small white onion, finely chopped
  • Zest of 1 lemon + juice of ½ lemon
  • ½ tsp paprika

Preparation:

  1. Melt butter in a skillet and add garlic, Dijon mustard, cayenne pepper, parsley, chili flakes, thyme, onion, lemon zest, lemon juice, and paprika. Mix well, set aside, and let flavors meld.
  2. Cook the steak using your preferred method—grill, skillet, or sous vide. If using sous vide, season the ribeye with salt, pepper, butter, and thyme, then vacuum-seal and cook at 120°F (50°C) for 2 hours.
  3. Remove steak from sous vide and sear quickly in a very hot skillet with a little oil, approximately 2 minutes per side.
  4. Finish by generously drizzling cowboy butter over the steak and briefly flame for a spectacular finish.
