For the Risotto
- 600g Arborio rice
- 2 liters beef broth
- 4 Portuguese pears, diced

Instructions
- Prepare the Pears: Cut the pears into small cubes, keeping the skin on. Sauté them in butter until golden brown. Set aside.
- Heat the Broth & Preheat the Oven: Keep the beef broth warm over low heat and preheat the oven to 180°C (350°F).
- Prepare the Medallions: Tie each filet mignon medallion with cooking twine to hold its shape. Season with salt and pepper. Sear in a hot pan with olive oil for about 3 minutes per side until browned. Transfer to a baking sheet and set aside.
- Start the Risotto: In the same pan used for the beef, add more olive oil and sauté the onion for 2 minutes. Stir in the Arborio rice, then deglaze with white wine. Once the wine evaporates, begin adding ladles of hot beef broth, stirring continuously.
- Cook the Risotto: Continue adding broth gradually, stirring frequently, for about 15 minutes. Meanwhile, place the beef medallions in the oven.
