Ingredients

    • 200ml boiling water
    • 150ml white wine

  • For the Cheesy Mash:
    • 1kg potatoes, peeled and diced
    • 1 cup grated cheese
    • 200ml milk
    • Salt & pepper to taste

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 180°C (350°F).
  2. Prepare the Mashed Potatoes:
    • Boil a large pot of salted water and add the diced potatoes.
    • Cook until fork-tender (about 15 minutes).
  3. Cook the Chicken & Vegetables:
    • In a large oven-safe pan, heat olive oil over medium heat.
    • Add onion and garlic, sauté until soft. Push to the side.
    • Place chicken thighs skin-side down and sear until golden brown.
    • Flip the chicken, turn the heat to low.
    • Add cherry tomatoes and broccoli, ensuring they are submerged in the liquid.
    • Pour in the boiling water with dissolved chicken stock cube and white wine.
    • Season with salt and pepper, stir, and transfer to the oven.
    • Bake for 20 minutes.
  4. Finish the Cheesy Mash:
    • Drain the potatoes and return them to the pot.
    • Add grated cheese and milk, mash until smooth and creamy.
    • Season to taste and keep warm with the lid on.
