Ingredients

  • 4 large baking potatoes
  • Olive oil
  • Salt and ground black pepper
  • 50g butter (plus extra for topping)
  • 3 cloves garlic, finely chopped
  • 40g plain flour
  • 500ml milk
  • 100g grated mature cheddar (plus 50g extra for topping)
  • 150g Camembert, cut into wedges

Instructions

1. Bake the Potatoes

  • Heat oven to 220°C.
  • Place potatoes in an ovenproof dish, ensuring space between them.
  • Coat with olive oil, season with salt and pepper, and bake for 1 hour or until tender.

2. Make the Cheese Sauce

  • Melt butter in a non-stick pan.
  • Fry garlic for 1 minute, then stir in flour until bubbling.
  • Gradually add milk, stirring continuously until smooth and thickened.
  • Season with salt and pepper.
  • Mix in grated cheddar until melted, then set aside.

3. Assemble and Grill

  • Cut a cross on each potato and press the sides to open.
  • Add a knob of butter to each and fluff the inside with a fork.
  • Insert Camembert wedges into the potatoes.
  • Pour the cheese sauce over, covering the skins.
  • Sprinkle with extra cheddar.
  • Grill until the topping is golden and bubbly.
