Easy and Irresistible Œufs Cocotte with Goat Cheese and Bacon

Ingredients (Serves 2)

  • ½ yellow onion, sliced
  • ½ red onion, sliced
  • A drizzle of olive oil
  • A generous splash of apple cider vinegar
  • 200g bacon lardons
  • 200ml crème fraîche (liquid)
  • Goat cheese log
  • 2 eggs
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat your air fryer or oven to 180°C (356°F).
  2. Heat olive oil in a pan and sauté the sliced onions until softened, about 5 minutes.
  3. Add apple cider vinegar to the onions and cook for an additional 2 minutes until caramelized.
  4. Stir in the bacon lardons and cook until lightly browned.
  5. In each ramekin, place a slice of goat cheese at the bottom. Top with the onion-bacon mixture, then add small pieces of goat cheese on top.
  6. Create a small well in the center of each ramekin and carefully crack an egg into it.
  7. Season with freshly ground black pepper.
  8. Bake in the air fryer or oven for about 7 minutes, until the egg whites set but the yolks remain soft.
