Ingredients

  • For the Brownies:
    • 170g butter
    • 200g dark chocolate
    • 160g plain flour
    • 40g cocoa powder

    • 200g caster sugar

    • 1 tbsp vanilla extract
    • ½ tsp salt
    • 50g dark chocolate chunks
  • For the Nutella-Hazelnut Filling:
    • 140g Nutella
    • 50g chopped hazelnuts
  • For the Hazelnut Ganache:
    • 50g chopped hazelnuts
    • 170g (6oz) dark chocolate chips
    • 120ml (4oz) double/whipping cream
    • 2 tbsp golden/corn syrup (or your preferred syrup)

Instructions

  1. Prepare the Nutella-Hazelnut Filling:
    • Chop the hazelnuts into small pieces.
    • Mix them with the Nutella and set aside.
  2. Make the Brownies:
    • Preheat your oven to 170°C (fan-assisted).
    • Melt the dark chocolate and butter in the microwave in 20-second intervals. Let it cool for at least 5 minutes.
    • In a separate bowl, beat eggs, caster sugar, brown sugar, and vanilla extract for 4 minutes until creamy.
    • Fold in the slightly cooled chocolate-butter mixture.
    • Sift half the flour and cocoa powder into the bowl, fold in gently. Repeat with the remaining flour and cocoa.
    • Stir in the dark chocolate chunks.
  3. Assemble & Bake:
    • Line a brownie tin with parchment paper.
    • Pour half the brownie batter into the tin.
    • Spread the Nutella-hazelnut mixture over it, leaving a small border around the edges.
    • Pour the remaining brownie batter over the filling and spread evenly.
    • Bake for 25-30 minutes (25 minutes for extra fudgy brownies).
    • Let the brownies cool completely before adding the ganache.
  4. Make the Hazelnut Ganache:
    • Heat the cream in the microwave for 1 minute.
    • Pour the hot cream over the dark chocolate chips, let sit for 5 minutes, then whisk until smooth.
    • Stir in the chopped hazelnuts.
  5. Assemble & Serve:
    • Spread the hazelnut ganache over the cooled brownies.
    • Slice into squares and serve as-is or slightly warmed with vanilla ice cream.
