This recipe takes it to the next level with a soft, fluffy dough made using the Tangzhong method, a rich garlic butter sauce, and melted cheddar cheese. Ingredients

For the Tangzhong (Flour Paste):

  • 15 g flour (1.5 tablespoons)
  • 100 ml milk (1/2 cup)

For the Dough:

  • 300 g flour (2.5 cups)
  • 100 ml milk
  • 40 g cream cheese (2 tablespoons)
  • 6 g dry yeast (2.5 teaspoons)
  • 18 g sugar (1 tablespoon)
  • 1 egg
  • 20 g room-temperature butter
  • 10 g salt (1 teaspoon)

For the Sauce:

  • 1 head of garlic
  • Thyme
  • Olive oil
  • Salt
  • 70 g butter
  • Fresh parsley
  • 100 g cheddar cheese

Instructions

  1. Prepare the Tangzhong:
    • In a small saucepan, combine 15 g of flour with 100 ml of milk.
    • Cook over medium heat, stirring continuously until it thickens to a pudding-like consistency.
    • Remove from heat and let it cool.
  2. Make the Dough:
    • In a mixing bowl, combine the flour, sugar, yeast, and milk.
    • Add the Tangzhong paste, cream cheese, egg, and salt.
    • Knead the dough until smooth and elastic.
    • Incorporate the butter and knead again until fully combined.
    • Cover the dough with a damp cloth and let it rise for 1 hour, or until it doubles in size.
  3. Prepare the Sauce:
    • Wrap the garlic head in baking paper and then in aluminum foil.
    • Bake in a preheated oven at 200°C (390°F) for 15 minutes.
    • Let the garlic cool, then squeeze the cloves into a bowl.
    • Add thyme, olive oil, butter, parsley, and salt. Mix until smooth.
  4. Shape and Assemble:
    • Roll the risen dough into a 30×30 cm square.
    • Spread the garlic sauce evenly over the dough and sprinkle the grated cheddar cheese.
    • Cut the dough into 16 equal squares and stack them.
    • Place the stacked squares into a buttered 35×15 cm loaf pan.
    • Let the dough rise again for 30 minutes.
  5. Bake:
    • Preheat the oven to 180°C (355°F).
    • Bake the garlic bread on the lowest rack for about 25-30 minutes, or until golden brown and cooked through.
