Instructions

  1. Prepare the Cookie Base
    In a mixing bowl, combine almond flour, melted coconut oil, maple syrup, and salt. Stir until well incorporated. Press approximately 1 tablespoon of the mixture into each cavity of a candy mold.
  2. Bake and Cool
    Preheat your oven to 350°F (175°C). Bake the cookie bases for about 15 minutes or until lightly golden. Remove from the oven and let them cool completely.
  3. Make the Peanut Butter Layer
    In a small saucepan over low heat, mix the peanut butter and coconut oil until smooth and creamy. Allow the mixture to cool slightly, then spoon a layer onto the cooled cookie bases. Place the molds in the freezer for about 30 minutes until the peanut butter layer is firm.
  4. Coat with Chocolate
    Melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between each until smooth. Dip each frozen candy into the melted chocolate to fully coat it. Sprinkle a pinch of sea salt on top while the chocolate is still warm.
  5. Chill and Serve
    Place the chocolate-coated candies in the refrigerator until the chocolate sets completely. Serve chilled or at room temperature.
