  1. Roast the Peppers:
    • Preheat oven to 200°C (390°F).
    • Roast the red bell peppers for 25-30 minutes until skins blister, or char them over an open flame.
    • Let cool, then peel and roughly chop.
  2. Blend the Ingredients:
    • In a blender, combine roasted peppers, onion, garlic, chilies, lemon juice, vinegar, smoked paprika, cumin, oregano, salt, black pepper, and brown sugar.
    • Blend until smooth.
  3. Adjust Consistency & Taste:
    • Taste and adjust salt, sugar, or vinegar for balance.
    • Add more water if the sauce is too thick.
  4. Final Cooking (Optional for Extra Depth):
    • Pour the sauce into a saucepan and simmer over low heat for 5-10 minutes to enhance the flavors.
  5. Store & Serve:
    • Let the sauce cool and transfer it to a jar.
    • Store in the fridge for up to 2 weeks.

Tips for Success

  • Sauté the Onion & Garlic First: This enhances their sweetness and reduces sharpness.
