- ¼ cup apple cider vinegar

- 2 tbsp smoked paprika
- 1 tbsp cayenne pepper (optional for extra heat)
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1 tsp ground black pepper
- 1 tsp salt
- 1 tbsp olive oil
- 1 tbsp brown sugar
- ¼ cup water (adjust for consistency)

Instructions
- Roast the Peppers:
- Preheat oven to 200°C (390°F).
- Roast the red bell peppers for 25-30 minutes until skins blister, or char them over an open flame.
- Let cool, then peel and roughly chop.
- Blend the Ingredients:
- In a blender, combine roasted peppers, onion, garlic, chilies, lemon juice, vinegar, smoked paprika, cumin, oregano, salt, black pepper, and brown sugar.
- Blend until smooth.
- Adjust Consistency & Taste:
- Taste and adjust salt, sugar, or vinegar for balance.
- Add more water if the sauce is too thick.

- Pour the sauce into a saucepan and simmer over low heat for 5-10 minutes to enhance the flavors.

- Let the sauce cool and transfer it to a jar.
