A drizzle of hot honey that ties everything together beautifully. Whether you’re meal prepping or making a satisfying dinner, this recipe is a must-try.

Ingredients

For the Chicken:

  • 2 large chicken breasts
  • 2 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

For the Hot Honey:

  • 1/4 cup honey
  • 1 tsp red pepper flakes
  • 1/2 tsp cayenne pepper
  • 1 tbsp hot sauce

For the Vegetables:

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 red onion, cut into wedges
  • 2 tbsp olive oil
  • 1 tsp Cajun seasoning
  • 1/2 tsp salt

Instructions

Prepare the Chicken:
Using a sharp knife, score the chicken breasts in a crisscross pattern, making sure not to cut all the way through. This helps the seasoning penetrate deeply and allows for an even cook.

In a small bowl, mix the Cajun seasoning, smoked paprika, garlic powder, onion powder, salt, and black pepper. Rub the seasoning mix all over the chicken breasts, ensuring it gets into the crisscross cuts. Drizzle olive oil over the chicken and let it marinate for at least 30 minutes.

Prepare the Vegetables:
Preheat the oven to 400°F (200°C). Toss the sliced vegetables with olive oil, Cajun seasoning, and salt. Spread them evenly on a baking sheet.

Cook the Chicken & Veggies:
Heat a grill pan or cast-iron skillet over medium-high heat. Cook the chicken for about 4-5 minutes per side or until it gets a nice sear and the internal temperature reaches 165°F (75°C). Alternatively, bake the chicken in the oven for 20-25 minutes.

While the chicken is cooking, roast the vegetables in the oven for 20 minutes or until tender and slightly charred.

Make the Hot Honey:
In a small saucepan over low heat, combine honey, red pepper flakes, cayenne, and hot sauce. Stir well and let it warm for 2-3 minutes. Remove from heat and let it cool slightly.

Assemble and Serve:
Place the cooked chicken on a serving plate, drizzle generously with the hot honey, and serve alongside the roasted vegetables. Garnish with fresh herbs if desired.

Tips for Success

  • Make sure to score the chicken deeply enough to hold the seasoning but not too deep to cut through.
  • Letting the chicken marinate enhances the flavors even more.
  • Adjust the spice level of the hot honey by adding more or less red pepper flakes and cayenne.

Why This Recipe Works
The crisscross technique allows the seasoning to penetrate, giving the chicken an incredible depth of flavor. The combination of smoky, spicy Cajun seasoning and sweet, fiery honey creates a perfect contrast. The roasted vegetables add texture and balance, making this dish not only delicious but also well-rounded.
