Ingredients

  • 2 lbs Yukon Gold potatoes, peeled and quartered 🥔
  • Salt & pepper, to taste
  • 6 tbsp butter, cubed 🧈
  • ½ cup heavy cream
  • 1 tbsp fresh chives, chopped 🌿
  • Vegan Option:
    • Use plant-based butter and unsweetened oat milk for a dairy-free version.

Instructions

1️⃣ Cook the Potatoes

  • Place the peeled and quartered potatoes in a large pot.
  • Cover them with salted water and bring to a boil.
  • Reduce heat and simmer for around 25 minutes, until fork-tender.
  • Drain and return the potatoes to the pot.
  • Cook over moderate heat for 1 minute to evaporate any excess moisture.

2️⃣ Prepare the Cream & Butter Mixture

  • In a small saucepan, melt the butter into the heavy cream over medium heat.

3️⃣ Mash & Mix

  • Using a potato ricer or food mill, press the cooked potatoes directly over the butter and cream mixture.
  • Stir gently with a wooden spoon until light, fluffy, and smooth.
  • Season with salt and pepper, and fold in the fresh chives for extra flavor.

📌 Prep Time: 10 minutes
📌 Cook Time: 30 minutes

Tips for Success

  • Use Yukon Gold potatoes—they have a naturally buttery flavor and creamy texture.
  • Don’t overwork the potatoes—using a food processor or mixing too much can make them gummy instead of fluffy.
  • Warm the cream and butter together before adding to the potatoes for a smoother consistency.
  • For extra decadence, try adding a touch of truffle oil or Parmesan cheese.

Why This Recipe Works
