  • 250ml whole milk

Instructions

1. Make the Pavlova

  • Whip egg whites until frothy.
  • Gradually add granulated sugar, beating until stiff peaks form (about 10 minutes).
  • Fold in powdered sugar and cornstarch gently.
  • Shape the meringue into a circle with soft peaks on a baking sheet.
  • Bake at 125°C (257°F) for 2 hours, or at the lowest setting for gas ovens.
  • Cool completely before filling.

2. Prepare the Berry Custard Cream

  • In a bowl, combine sugar and cornstarch.
  • Whisk in the egg and yolk until smooth.
  • Slowly add milk and blended berries.
  • Cook on low heat, stirring constantly until thickened.
  • Remove from heat and chill before using.
