Introduction

Potato Rösti, also known as Pommes Darphin, is a Swiss and French-inspired crispy potato dish. Traditionally cooked in a cast-iron skillet, it delivers a golden, crispy crust with a soft and fluffy center. Topped with creamy crème fraîche, smoked salmon, fresh chives, and a touch of black pepper, this dish is both luxurious and easy to prepare—perfect for a gourmet brunch or an elegant appetizer.

Ingredients

  • For the Rösti:
    • 3-4 large Yukon Gold potatoes
    • 3 tbsp melted butter
    • 2 tbsp olive oil (plus extra for cooking)
    • Salt & pepper to taste

    • Labneh or crème fraîche (to taste)
    • Smoked salmon (to taste)
    • Fresh chives, finely chopped
    • Black pepper
    • 1 lemon (zest)

Instructions

  1. Prepare the Potatoes:
    • Grate the potatoes using a box grater.
    • Place the grated potatoes in a clean kitchen towel or cheesecloth, and squeeze out as much moisture as possible.
  2. Season & Mix:
    • In a bowl, mix the grated potatoes with melted butter, olive oil, salt, and pepper.
  3. Cook the Rösti:
    • Heat a cast-iron skillet on high for 2 minutes.
    • Add olive oil, then spread the potato mixture evenly in the pan.
    • Gently press the potatoes down with a spatula, but don’t overdo it—keeping them fluffy helps create a light texture.
    • Cook on medium to medium-high heat for about 12 minutes per side, or until golden brown and crispy.
  4. Assemble & Serve:
    • Transfer the crispy rösti to a serving plate.
    • Spread a generous dollop of crème fraîche or labneh on top.
    • Add smoked salmon, chopped chives, and black pepper.
    • Finish with a drizzle of olive oil and fresh lemon zest.
