Instructions

    • Add the diced pumpkin and cook for 10-12 minutes until soft. Mash lightly and set aside.
  2. Cook the Risotto:
    • In a separate pot, heat some olive oil and sauté the chopped shallot, sage leaves, and rosemary until fragrant.
    • Add the Carnaroli rice and toast it for about 2 minutes.
    • Pour in a ladle of vegetable broth and stir continuously. Keep adding broth gradually, allowing it to absorb before adding more.
    • After 10 minutes, stir in the mashed pumpkin and continue cooking until the rice is al dente (about 18 minutes total).
  3. Make the Gorgonzola Sauce:
    • In a small saucepan, melt 20g of sweet Gorgonzola with 10g of milk over low heat until smooth. Set aside.
  4. Finish the Risotto:
    • Stir in the 40g of Gorgonzola and let it melt into the risotto. Season with salt and black pepper to taste.
  5. Serve and Garnish:
    • Plate the risotto in a bowl and drizzle with the Gorgonzola sauce.
    • Garnish with crispy sage leaves and extra black pepper for a perfect finish.
