Introduction Salmon Wellington, also known as Salmon en Croûte, is an exquisite dish that combines the delicate flavors of salmon with a rich spinach and cheese filling, all wrapped in a golden, flaky puff pastry. This dish is perfect for special occasions or a sophisticated family dinner.

Ingredients

  • 1 large salmon fillet (about 600g)
  • 1 sheet of puff pastry, thawed
  • 2 tablespoons butter
  • 1 shallot, finely chopped
  • 2 garlic cloves, minced
  • 150g fresh spinach
  • 100g cream cheese
  • 50g grated Parmesan cheese
  • 1/4 cup dry white wine
  • 1 egg (for egg wash)
  • Salt and pepper to taste

Instructions

  1. Prepare the Spinach Filling:
    • In a pan, melt the butter over medium heat.
    • Sauté the chopped shallot and minced garlic until soft and translucent.
    • Add the white wine and cook until the liquid evaporates.
    • Stir in the spinach and cook until wilted.
    • Remove from heat and mix in the cream cheese and grated Parmesan. Let the mixture cool.
  2. Assemble the Wellington:
    • Roll out the puff pastry on a floured surface.
    • Place the salmon fillet in the center and season with salt and pepper.
    • Spread the cooled spinach and cheese mixture on top of the salmon.
    • Fold the puff pastry over the salmon, sealing the edges. Place seam-side down on a parchment-lined baking sheet.
  3. Decorate and Bake:
    • Score the top of the pastry with a knife to create a crosshatch pattern.
    • Brush with beaten egg.
    • Bake in a preheated oven at 200°C (400°F) for 25-30 minutes, until the pastry is golden brown.
